Oatmeal Chocolate Chip Cookies!

Cookies are one of the best treats ever invented! One of my absolute favorites are oatmeal chocolate chip cookies. Yesterday we needed a treat to take to a pot-luck dinner, so I made up a batch of these great treats. This is the recipe that my mom always made when I was a kid. When I was old enough to bake, I made cookies almost every Sunday.

This recipe is already adjusted for high altitude, sometimes I do need to add an extra 1/4 cup of  flour so they don't spread in the oven and become too thin and crunchy.

Oatmeal Chocolate Chip Cookies

     1 cup Shortening
     1 cup Sugar
     1 cup Brown Sugar (packed)
     2 Eggs
     2 Tblsp Water
     3 cup Oatmeal
     1 Tsp Vanilla
     1 ½ cup Flour
     1 Tsp Salt
     1 Tsp Baking Soda
     1 cup Chocolate Chips

Heat oven to 350*

Blend together the shortening, sugar and brown sugar on medium speed until well blended. Add the eggs and water and mix on medium. Blend in the oatmeal and vanilla. Slowly add the flour, mixing on low speed. Add the salt and baking soda, mix well. Add the chocolate chips.

Drop by spoonfuls onto baking sheet lined with parchment paper. Bake for 10 – 12 min. Cool on sheet 2 – 3 min, then move to wire rack. Cool completely, store in zip-top bag or container with a tight-fitting lid.

Place ½ slice of bread in the cookie container to help the cookies stay soft.

Enjoy!

  1. I think I am going to try to make the cookies today. I hope they turn out. Ever since we have moved to WY I haven't been able to get cookies to work very well.
